Garlicky prawns with sherry

Garlicky prawns in sherry is Spain's answer to fast, elegant cooking. This tapa relies on the Maillard reaction between hot oil and sliced garlic to build savory depth in minutes, while dry sherry adds both acidity and subtle sweetness that prevents the dish from turning one-note. The beauty lies in restraint: quality olive oil, fresh prawns, and good sherry do the work themselves.

Instructions

step 1 Heat the olive oil in a large frying pan.

Tip in the garlic slices and cook for a few secs.

Then stir through the prawns and cook for a couple of mins until they start to turn pink. step 2 Pour over the sherry and cook for a few mins more, just until the prawns are cooked through.

Sprinkle with parsley before serving..
